CHIA & FLAXSEED OVERNIGHT OATS with BERRIES (V) (VN)

INGREDIENTS
- 80g rolled oats
- 1 ½ tsp ground flaxseeds
- 1 ½ tsp chia seeds
- ¼ tsp ground cinnamon
- 1 apple, grated
- juice of 1 orange
- 120ml oat milk or other plant-based milk of choice
- 150g fresh blueberries & strawberries (or any berries you fancy)
- 2 tbsp dairy-free yogurt alternative (alternatively plain yogurt for non-vegan)
Optional garnish
- chopped nuts
METHOD
- Add the oats, flaxseeds, chia seeds, cinnamon and apple to a bowl and mix. Stir in the orange juice and oat milk.
- Trim the tops off half the strawberries. Lightly crush the strawberries and half the blueberries with the back of a fork. Add to the oat mixture and mix. Cover the bowl and refrigerate overnight.
- In the morning trim the remaining strawberries. Dish the oats into bowls and sprinkle with a pinch of cinnamon. Top with a dollop of yogurt alternative and the remaining berries.
