TUSCAN BEAN SALAD (V) (VN)

INGREDIENTS
- 1 medium red onion, thinly sliced
- 10 baby plum tomatoes, halved
- ¼ jar roasted red peppers (or 1 red bell pepper), diced
- 1 can cannellini beans, drained
- handful (25g) flat leaf parsley, stalks trimmed
- ½ bag wild rocket or lambs lettuce
Dressing
- 100ml tomato juice
- 2 tbsp extra virgin olive oil
- 1 tbsp sherry vinegar (alternatively red wine vinegar)
- 1 tsp dried oregano
- salt & freshly ground black pepper
METHOD
- Firstly, prepare the dressing by adding all the ingredients to a bowl and whisking together
- Add all the salad ingredients, except the rocket leaves, to a bowl and toss together with the dressing.
- Just before you are ready to serve the salad add the rocket and toss together.
