TUSCAN BEAN SALAD (V) (VN)


Nutritional values per serving:

calories 302, protein 11.9g, fat 15g (saturated 1.9g), carbs 26.5g (sugar 6.6g), sodium 720mg


INGREDIENTS

  • 1 medium red onion, thinly sliced
  • 10 baby plum tomatoes, halved
  • ¼ jar roasted red peppers (or 1 red bell pepper), diced
  • 1 can cannellini beans, drained
  • handful (25g) flat leaf parsley, stalks trimmed
  • ½ bag wild rocket or lambs lettuce

Dressing

  • 100ml tomato juice
  • 2 tbsp extra virgin olive oil
  • 1 tbsp sherry vinegar (alternatively red wine vinegar)
  • 1 tsp dried oregano
  • salt & freshly ground black pepper

METHOD

  • Firstly, prepare the dressing by adding all the ingredients to a bowl and whisking together
  • Add all the salad ingredients, except the rocket leaves, to a bowl and toss together with the dressing.
  • Just before you are ready to serve the salad add the rocket and toss together.
