TUNA SALAD

INGREDIENTS
- 1 can (150g) tuna steak in spring water, drained
- 1 bag (100g) baby leaf herb salad
- 80g cannellini beans in water, drained
- 5 sundried tomatoes in oil, drained & roughly chopped
- 80g (drained) roasted red peppers, large dice
- 10 Kalamata black olives
- 100g sliced artichoke hearts in water, drained
- 4 slices cucumber, halved
- 10 cherry tomatoes, halved
- Dressing
- 1 ½ tbsp (22ml) extra virgin olive oil
- 1 tsp (5ml) sherry vinegar (or red wine vinegar)
- ½ lemon, juice and zest
METHOD
- Whisk the dressing ingredients together.
- Toss together in a bowl the herb salad, cannellini beans, bell pepper, sundried tomatoes and roasted peppers. Place on a serving plate.
- Arrange the remaining ingredients over the salad.
- Drizzle with dressing and serve.
