TORTELL0NI in CHICKEN BROTH

INGREDIENTS
- 500ml good quality fresh chicken stock
- 100g frozen peas
- 50g baby spinach leaves
- 2 tbsp chopped fresh herbs of choice (parsley, coriander, tarragon, chives)
- freshly ground black pepper, to taste
- 250g fresh Prosciutto & Mozzarella Tortelloni (La Familia Rana brand is very good)
- salt (optional as the stock can be salty)
- 40g Parmigiano Reggiano, grated
- 1 tbsp extra virgin olive oil
METHOD
- Heat the chicken stock in a large saucepan over medium heat.
- Add the peas, black pepper and herbs and simmer for 2 minutes. Reduce the heat to low.
- In the meantime, bring a pot of salted water to the boil. Cook the tortelloni for 1 ½ minutes. Drain and add to the broth.
- Stir in the spinach leaves and switch off the heat. Allow to stand for 30 seconds before serving. Taste and add salt and pepper if desired.
- To serve drizzle with olive oil and scatter over some grated Parmigiano Reggiano.
