TOMATO, MELON & FETA SALAD (V)

INGREDIENTS
- 1½ tbsp extra virgin olive oil
- 2 tsp lemon juice
- 1 tbsp fresh basil leaves, chopped
- 1 tbsp fresh mint, chopped
- salt & freshly ground black pepper
- 3 ripe vine tomatoes, quartered
- 1 small red onion, finely sliced
- 250g watermelon (or Galia melon if preferred), 2cmchunks
- 1 little gem lettuce, core trimmed & thinly sliced
- 100g vegetarian feta cheese, crumbled *
- ½ tsp dried oregano (optional)
METHOD
- Mix together the olive oil, lemon juice, basil, mint and seasoning to make a dressing.
- Add the tomato, onion, melon, lettuce and dressing to a bowl and gently mix together.
- To serve scatter over the feta cheese and sprinkle with oregano (optional).
