Stir Fried Orange Beef & Spring Onion Rice

Ingredients
- 2 medium oranges
- 20g fresh root ginger
- 350g thin cut beef frying steak
- 1 tsp ground ginger
- 1 tbsp cornflour
- 2 tbsp dark soy sauce
- 1 tbsp sunflower oil
- 1 red pepper
- 1 green pepper
- 2 garlic cloves thinly sliced
- 250g ready cooked basmati rice
- 6 spring onions trimmed and thinly sliced
- Sea salt
- Ground black pepper
Method
Peel a ¼ of an orange rind and slice into thin strips. Once complete add the rind to a bowl of hot water to soften.
Peel and slice the ginger into thin strips
Cut the oranges and squeeze 150ml of juice into a cup (add water if required to top up to the 150ml mark)
In a separate bowl add the beef, ginger from above, a pinch of salt and pepper, and mix through the meat thoroughly
In a separate bowl make the sauce by mixing 2 tablespoons of the orange juice and cornflower together to form a paste, stir in the soy sauce and remaining orange juice and mix together
Heat a non-stick wok with 1 teaspoon of oil
Stir fry the beef until brown over a high heat, once cooked place into a bowl
Remove the orange rind above from the water and shake off any excess
Use the wok stir fry the peppers, add the garlic, ginger and orange rind and cook for approx. 1 minute
Add the cooked beef back into the wok add the sauce from above and stir fry with the veg to heat through.
Whilst the beef is heating add the spring onion to the rice and heat the rice as instructed
Serve as you like
