SERRANO HAM, AVOCADO & PINENUTS on SOURDOUGH

INGREDIENTS


 

  • 2 slices half-rye sourdough bread, toasted
  • 2 tbsp (60g) soft goat’s cheese or low-fat cream cheese
  • 1 avocado
  • juice of ½ lemon
  • salt & freshly ground black pepper
  • small handful baby spinach leaves
  • 4 slices Serrano ham (or Prosciutto)
  • 8 cherry tomatoes, halved
  • 2 tbsp pine nuts, toasted
  • balsamic vinegar
  • extra virgin olive oil

 

METHOD


 

  • Lightly toast the pine nuts in a dry pan.
  • Toast the sourdough and spread with goat’s cheese.
  • Mash the avocado and season with lemon juice, salt and pepper to taste. Spread the avocado on the goat’s cheese and scatter over the toasted pine nuts.
  • Add the spinach leaves and fold over the Serrano ham slices.
  • Add the cherry tomatoes and drizzle with balsamic vinegar and extra virgin olive oil.
