MUSHROOMS with CRÈME FRAICHE (V) (VN)*

(VN)* substitutes: olive oil for butter; blend vegan cream cheese with lemon juice & soya milk for crème fraiche
INGREDIENTS
- 1 tsp unsalted butter *
- 1 clove garlic, crushed
- 250g chestnut mushroom, halved
- small handful chives, sliced
- 2 slices wholemeal bread, toasted
- 2 tbsp half fat crème fraiche *
- salt & freshly ground black pepper, to taste
METHOD
- Heat the butter in a large pan and gently sauté the garlic for a minute.
- Add the mushrooms and sauté for about 10 minutes, or until tender, stirring occasionally.
- Toast the bread when the mushrooms are nearly done.
- Stir the crème fraiche and chives into the mushrooms. Season with salt and pepper if needed.
- Spoon over the toast and serve.
