mozzarella tomatos with chicken

Ingredients

  • 1/2 tbsp coconut oil
  • 1x chicken breast fillet sliced into strips
  • 1 large tomato cut into slices
  • 1x mozzarella drained and cut into slices
  • 6 basil leaves, plus a few extra to garnish
  • salt & pepper
  • 1 tsp olive oil
  • 1 tbsp balsamic vinegar

 

Method

  • heat the pan and melt the coconut oil over a medium heat
  • add the chicken to the pan and cook until the chicken is fully cooked
  • while the chicken is cooking slice the tomatoes & mozzarella into slices and with the basil arrange them on the plate overlapping then season with the salt & pepper and put the olive oil over them.
  • once you’re ready to eat place the chicken and drizzle with balsamic vinegar
