Ingredients
- 1/2 tbsp coconut oil
- 1x chicken breast fillet sliced into strips
- 1 large tomato cut into slices
- 1x mozzarella drained and cut into slices
- 6 basil leaves, plus a few extra to garnish
- salt & pepper
- 1 tsp olive oil
- 1 tbsp balsamic vinegar
Method
- heat the pan and melt the coconut oil over a medium heat
- add the chicken to the pan and cook until the chicken is fully cooked
- while the chicken is cooking slice the tomatoes & mozzarella into slices and with the basil arrange them on the plate overlapping then season with the salt & pepper and put the olive oil over them.
- once you’re ready to eat place the chicken and drizzle with balsamic vinegar
