Mini Turkish-style pizzas
serves 4 / per serving 624kcal / 34.5g fat / 17.6g saturates / 4.3g sugars /1.71g salt
Ingredients
500g lamb mince
2 tsp sumac, plus extra for sprinkling
2 tbsp. tomato puree
12 mini white pitta breads
100g feta
1 red chilli, deseeded and chopped
small handful fresh coriander, chopped plus extra to serve
1 tbsp. olive oil
110g bag baby leaf wild rocket to serve
Method
- preheat the grill to medium. meanwhile, dry-fry the lamb mince in a large frying pan over a high heat for 5mins. Add the sumac and tomato puree, season and cook for 3 mins.
- Meanwhile, grill the mini pitta breads for 30 sec-1min each side to warm through, divide between 4 plates.
- Spoon the lamb on top of the pitta breads, then crumble over the feta, sprinkle with a little of the chilli and coriander. Drizzle with the olive oil, sprinkle with more sumac, to taste, and serve with rocket leaves and extra chilli on the side.
