MEDITERRANEAN CHICKPEA SALAD – BALELA (V) (VN)

INGREDIENTS
- ½ can (200g) chickpeas, drained
- 1 green bell pepper, diced
- 5 sundried tomatoes, roughly chopped
- 4 spring onions, sliced 1cm
- 6 black olives
- 6 green olives
- 10 cherry tomatoes, halved
- 1 red chilli pepper, thinly sliced (optional)
- small bunch (25g) flat leaf parsley, destalked & roughly chopped
- small bunch mint, destalked & roughly chopped
Dressing
- 1 tbsp extra virgin olive oil
- 1 tsp lemon juice
- 1 tsp white wine vinegar
- 1 clove garlic, crushed (optional)
- ⅓ tsp sumac (substitutes: lemon pepper or ½ tsp lemon zest)
- salt & freshly ground black pepper, to taste
METHOD
- Whisk all the dressing ingredients together in a bowl.
- Add all the salad ingredients to a bowl, season with salt and pepper and toss to combine.
- Drizzle over the dressing and serve.
