ITALIAN STYLE GREEN VEGETABLES (V) (VN)

INGREDIENTS
- 4 tablespoons extra virgin olive oil
- 4 cloves garlic, finely sliced
- 1 small head broccoli, cut into florets
- 12 green beans, ends trimmed and sliced in half
- 10 large Helda beans (flat beans), ends trimmed and sliced in 3
- 16 mange tout peas (snow peas), or sugar snap beans
- 1 lemon, juice and zest
- freshly ground sea salt and black pepper, to taste
- fresh flat leaf parsley (or soft herb of choice), finely chopped
- extra virgin olive oil for drizzling
METHOD
- Place a deep-lipped frying pan or wok on medium-low heat. Add the olive oil and garlic and gently sauté for a minute.
- Turn the heat up to medium.
- Add all the vegetables, the lemon zest and salt and pepper to taste.
- Gently toss the vegetables to coat well with the olive oil and garlic. Sauté the vegetables for about 5 minutes.
- Turn the heat to high and cover the vegetables with boiling water. Add a generous pinch of salt to the water.
- Boil rapidly until the vegetables are just done but still a bit crisp.
- Drain the vegetables and transfer to a serving bowl.
- Scatter over finely chopped parsley.
- Finish with a squeeze of lemon juice and a drizzle of good quality extra virgin olive oil.
