GRILLED HALLOUMI & TZATZIKI BURGER (V)

INGREDIENTS


  • 180g halloumi cheese, in 4 thick slices
  • 1 tbsp olive oil
  • pinch of smoked paprika (optional)
  • 2 bread rolls (seeded wholemeal, rustic wholemeal)
  • 2 tbsp tzatziki
  • Garnish
  • rocket or lettuce leaves
  • thinly sliced red onion
  • sliced tomato

 

METHOD


  • Lightly brush the halloumi slices with olive oil.
  • Heat a non-stick pan on medium-high heat. Cook the halloumi for 2 – 3 minutes on both sides, or until golden brown. Sprinkle with a pinch of paprika and set aside.
  • Lightly brush the cut sides of the rolls with olive oil and lightly toast them in the pan.
  • Add lettuce to the bottom half of the rolls and place the slices of halloumi on top.
  • Spoon over the tzatziki. As an alternative to tzatziki you can use Greek yoghurt with finely chopped mint added. Green or red pesto also works well.
  • Add the remaining garnishes and top with the other half of the roll. Feel free to add any other garnishes you fancy.
