GRILLED HALLOUMI, ORANGE & PUMPKIN SEED SALAD (V)

INGREDIENTS
- 200g reduced fat halloumi cheese, cut into 6 slices
- 1 orange
- ½ bag (65g) watercress, rocket & spinach salad
- 1 large pomegranate, seeds removed
- 2 tbsp (15g) pumpkin seeds
- 1 small red onion, halved & thinly sliced
- 8 cherry tomatoes, halved
- balsamic vinegar
- extra virgin olive oil
METHOD
- Heat a griddle pan on medium-high heat. Brush the halloumi slices with a little oil and add to the pan. Cook for about 1-2 minutes on each side until you have nice griddle lines on the halloumi.
- Top and tail the orange. Slice away the skin and pith and then segment the orange.
- Add the salad leaves, orange segments, pomegranate, pumpkin seeds, onion and tomatoes to a serving plate or bowl and gently toss to combine.
- Top with slices of halloumi and drizzle with balsamic vinegar and olive oil.
