GRANOLA CRUST, YOGURT & FRUIT PIZZA (V) (VN)*

(VN)* substitutes maple syrup for honey; soya yogurt for Greek yogurt; use vegan granola.

INGREDIENTS


 

  • 50g roasted unsalted cashew nuts
  • 2 large pitted dates
  • 2 tsp honey *
  • ¼ tsp cinnamon
  • ½ tsp vanilla extract
  • 60g granola (use granola with nuts not dried fruit) *
  • 200g fat-free Greek yogurt *
  • ½ lemon, juice & zest (or to taste)
  • sweetener such as stevia, to taste (optional)
  • 10g sunflower seeds
  • 6 strawberries, sliced or halved
  • 150g assorted berries (raspberry, blackberry, blueberry, cherry)
  • METHOD


  •  

    • Add the cashew nuts to a blender, or food processor, and finely chop. Add the dates, honey, cinnamon and a ¼ teaspoon vanilla extract and process to a paste Add to a bowl and stir in the granola.
    • Line a baking tray with greaseproof paper. Using damp hands, spread the granola mixture on the tray and firmly press into a disc, about 16cm in diameter. Cover with cling film and place in the freezer for about 15 minutes (or fridge for 1 hour) to firm up.
    • In a bowl combine the yogurt, ¼ teaspoon vanilla extract, lemon juice and zest, and (optional) sweetener.
    • Spread the yogurt on top of the granola disc and scatter over the sunflower seeds.
    • Arrange the strawberry pieces around the edge of the granola disc and the berries in the center.
