CHINESE ROAST CHICKEN DRUMSTICKS with FIVE SPICE, HONEY & SOY

INGREDIENTS
- 4 organic free-range chicken drumsticks
- 3 spring onions, sliced on the bias into 1cm pieces
- 1 tsp sesame seeds (optional)
Marinade
- 1½ tbsp light soy sauce
- 1½ tbsp runny honey, warmed if necessary
- 1 tsp canola or olive oil
- 1 tbsp water
- ½ tsp Chinese five spice
- salt and freshly ground black pepper, to taste
- 2 cloves of garlic, crushed
- 3cm piece of ginger, grated
METHOD
- Preheat the oven to 200°
- Add all the marinade ingredients to a medium-sized bowl and whisk together. Add the chicken drumsticks and toss to coat well. If you have the time leave the chicken drumsticks to marinate for 30 to 60 minutes.
- Tip the chicken and marinade into a roasting dish So the chicken fits a little snugly.
- Roast for 35 – 40 minutes, or until cooked through, sticky and golden. Turn the drumsticks over halfway through cooking.
- Scatter over the spring onions and (optional) sprinkle with sesame seeds.
