CHICKEN BURGER with CRANBERRY SAUCE

INGREDIENTS
- 2 lean chicken burgers (Heck make a good low fat/calorie fresh burger)
- 1 tsp smoked paprika
- salt & freshly ground black pepper
- 1 tsp olive oil
- 1 red onion, halved & sliced
- 1 tbsp (20g) whole cranberry sauce
- low calorie olive oil cooking spray
- 6 stalks chives, sliced
- 1 tsp Dijon mustard
- 2 tsp light mayonnaise
- lettuce leaves of choice
- thinly sliced cucumber rounds
- sliced tomato
METHOD
- Brush the chicken burgers with oil. Season with salt, pepper and paprika.
- Add the oil to a pan on medium heat. Add the onions, a pinch of salt and pepper and sauté for about 5 minutes, or until the onions have softened and browned. Turn the heat to low and stir in the cranberry sauce.
- Spray a non-stick pan (or griddle pan) on medium heat with low calorie cooking spray. When hot toast the buns on the cut sides. Set aside.
- Give the pan another spray and cook the chicken burgers for 8 minutes, turning once, or until golden and cooked through.
- Mix the mustard and mayonnaise together and spread on the both halves of the buns. Garnish the bottom halves with lettuce, cucumber and tomato, and place the burgers on top.
- Spoon the onion and cranberry mixture onto the burgers, sprinkle with chopped chives and add the bun tops.
