chicken and peanut salad in a pita

ingredients

1/2 fat free mayo or salad dressing

1 soy sauce

1/4 tsp ground ginger

1 peanut butter reduced fat

1 cooked chicken breast chopped

1/2 Chinese pea pod cut in half

1/2 red or yellow sweet peppers

1/4 roasted peanuts

3 whole wheat pita bread,cut in half


Method

  • Mix first for ingredients until well blended.
  • add chicken and veg and refrigerate one to fourhours.
  • stir in the peanuts and poon into pitas.
