BERRY, CHIA & MUESLI SMOOTHIE BOWL (V) (VN)*


Nutritional values per 2 serving:

calories 210, protein 6.5g, fat 7g (saturated 1g), carbs 24g (sugar 15.4g), sodium 140mg


(VN)* substitutes: use vegan muesli; maple syrup for honey

INGREDIENTS

  • 240g frozen berry smoothie mix
  • 170ml cashew or hazelnut or coconut milk
  • 2 tbsp (30g) low-sugar nutty muesli *
  • 1 tbsp (10g) chia seeds
  • 1 tsp honey *
  • 1 tbsp (10g) pumpkin seeds
  • 70g raspberries

METHOD

  • Add the berry mix and cashew nut milk to a stand blender and whizz until smooth.
  • Add half the muesli, half the chia seeds and the honey, and blend again. Add to 2 breakfast bowls.
  • Garnish with raspberries and pumpkin seeds, and the remaining muesli and chia seeds.
  • Serve immediately with an extra drizzle of honey if desired.
