BASIL, LEMON & PARMESAN LINGUINE (V)

INGREDIENTS
- 200g linguine or spaghetti
- 3 tbsp (45ml) extra virgin olive oil
- 1 lemon, juice & zest
- 3 ½ tbsp (40g) grated vegetarian Italian hard cheese substitute for Parmesan
- small bunch (about 25g) basil, leaves picked
- freshly ground black pepper
METHOD
- Prepare the pasta in plenty of well-salted boiling water according to the package instructions.
- Whilst the pasta is cooking, add the olive oil, lemon juice, lemon zest and Parmesan to a large saucepan on low heat and mix well.
- When the pasta is done use tongs to remove from the water directly to the saucepan, taking along a little pasta water.
- Add the basil leaves and toss to combine. If needed add a tablespoon of pasta water to loosen the pasta.
- Serve with a grind of black pepper, a sprinkle of grated Parmesan and a drizzle of olive oil.
