BAKED HALIBUT with ONIONS & TOMATO

INGREDIENTS


  • 3 tbsp extra virgin olive oil
  • 1 onion, sliced into rings
  • 1 medium red bell pepper, thinly sliced
  • 1 large tomato, chopped
  • salt & freshly ground black pepper
  • 2 skinless halibut fillets – about 180g (alternatively cod fillets
  • 4 sprigs thyme

METHOD


  • Pre-heat the oven to 200°
  • Add 2 tablespoons of olive oil to a pan on medium heat. Add the onions and peppers, and season with a little salt and pepper. Cover and gently cook for 8 minutes, stirring occasionally, or until the onions and peppers have softened.
  • Add the onions and peppers in an even layer in a ceramic baking dish and lay the tomatoes on top. Season the fish fillets and place on top. Place the thyme sprigs on the fish and drizzle with the remaining olive oil.
  • Cover the baking dish tightly with foil and bake for 10 minutes. Remove the foil and bake for a further 8-10 minutes or until the fish is cooked through.
