Bacon & onion pasta

Serves 4     595 Kcals    15.9g Fat     8.5g Saturates    11g sugar    1.56g Salt


 

400g pasta

1 tbsp olive oil

2 onions, finely sliced

1 clove garlic, finely sliced

200g smoked bacon medallions, cut into bite-size pieces

300ml tub  half-fat crème fraiche

small bunch fresh parsley chopped

 


Method

  • Fill a large pan with boiling water from the kettle and put over a medium heat to bring back to boil. Add the pasta and cook for 10mins until al dente. Drain and return to the pan.

 

  • while the pasta is cooking, heat the olive oil in a pan, then add the onion & garlic. Cook over a medium heat for 10 mins, then add the bacon pieces and continue cooking for 5 mins until the onions are just starting to turn golden and the bacon is crisp.

 

  • Stir the onions & bacon mixture into the pan of cooked pasta, add the crème fraiche and the parsley, and mix to the heat through. Season and serve.
