APPLE & BLUEBERRY OVERNIGHT OATS (V)

INGREDIENTS
- 50g porridge or rolled oats
- 100ml unsweetened dairy-free milk (almond, hazelnut)
- ¼ tsp vanilla extract
- ¼ tsp ground cinnamon, or to taste
- 200g fat-free Greek yoghurt
- 100g blueberries
- 20g (2 tbsp) cashew nuts, chopped
- 2 sweet apples, cored & coarsely grated
- 10g (1 tbsp) flaked almonds
METHOD
- Add the oats, almond milk, vanilla and cinnamon to a bowl and stir.
- To another bowl add the yoghurt and ½ of the blueberries. Using a fork lightly crush the blueberries. Add the cashew nuts and grated apple and mix. Add the yogurt mixture to the oats and mix well.
- Cover the bowl and chill in the fridge for at least 3 hours or preferably overnight.
- Spoon the oats into two bowls or suitable sealable containers. Scatter over the almonds and top with the remaining blueberries.
