MARINATED TOFU & HOISIN WRAPS (V) (VN)

INGREDIENTS
- 2 tbsp Chinese rice vinegar or cider vinegar
- ½ tsp Chinese five-spice or salt & pepper to taste
- 1 medium red onion, halved & thinly sliced
- 1 medium red bell pepper, cored & thinly sliced
- 85g white cabbage, thinly sliced
- 1 red chilli, de-seeded and thinly sliced
- 1 tbsp coconut or canola oil
- 160g marinated tofu pieces
- 2 seeded tortilla wraps
- 1 tbsp (16g) hoisin sauce, or to taste
- 1 tomato, halved and thinly sliced
- handful (15g) fresh coriander, leaves picked
METHOD
- Add the vinegar, five spice, onion, bell pepper, cabbage and chilli to a bowl and mix. Marinate until needed.
- Heat the oil in a pan on medium-high heat. Fry the tofu for 4 – 5 minutes until nicely browned, stirring often.
- Drain the vegetables from the marinade and warm the tortillas in a microwave.
- Spread each tortilla with hoisin sauce then add the marinated vegetables, tomato, tofu and coriander.
- Fold over the bottom of the tortilla and snugly roll up.
