TOMATO, MELON & FETA SALAD (V)

INGREDIENTS


 

  • 1½ tbsp extra virgin olive oil
  • 2 tsp lemon juice
  • 1 tbsp fresh basil leaves, chopped
  • 1 tbsp fresh mint, chopped
  • salt & freshly ground black pepper
  • 3 ripe vine tomatoes, quartered
  • 1 small red onion, finely sliced
  • 250g watermelon (or Galia melon if preferred), 2cmchunks
  • 1 little gem lettuce, core trimmed & thinly sliced
  • 100g vegetarian feta cheese, crumbled
  • ½ tsp dried oregano (optional)

METHOD


 

  • Mix the olive oil, lemon juice, basil, mint and seasoning to make a dressing.
  • Add the tomato, onion, melon, lettuce and dressing to a bowl and gently mix.
  • To serve scatter over the feta cheese and sprinkle with oregano (optional).
