GRILLED HALLOUMI, ORANGE & PUMPKIN SEED SALAD (V)

INGREDIENTS


 

  • 200g reduced fat halloumi cheese, cut into 6 slices
  • 1 orange
  • ½ bag (65g) watercress, rocket & spinach salad
  • 1 large pomegranate, seeds removed
  • 2 tbsp (15g) pumpkin seeds
  • 1 small red onion, halved & thinly sliced
  • 8 cherry tomatoes, halved
  • balsamic vinegar
  • extra virgin olive oil

METHOD


 

  • Heat a griddle pan on medium-high heat. Brush the halloumi slices with a little oil and add to the pan. Cook for about 1-2 minutes on each side until you have nice griddle lines on the halloumi.
  • Top and tail the orange. Slice away the skin and pith and then segment the orange.
  • Add the salad leaves, orange segments, pomegranate, pumpkin seeds, onion and tomatoes to a serving plate or bowl and gently toss to combine.
  • Top with slices of halloumi and drizzle with balsamic vinegar and olive oil.
