PORK SOUVLAKI SKEWERS

INGREDIENTS
- 300g pork fillet
- 2 tbsp olive oil
- 1 tsp dried mint
- 2 tsp dried oregano
- ½ lemon, juice of
- 1 clove garlic, crushed
- 1 tsp sherry or red wine vinegar
- salt & freshly ground black pepper, to taste
- ½ tsp smoked paprika
METHOD
- Trim any sinew from the pork fillet and cut into approximately 2x3cm pieces.
- Add all the remaining ingredients (except the paprika) to a bowl and whisk together. Add the pork and coat well with the marinade. Cover with cling film and marinate for ½ an hour (an hour is better if you have the time – it will intensify the flavours).
- Preheat a griddle pan on high heat.
- Thread the pork pieces onto 4 skewers. Don’t squeeze the pork pieces together so that the heat can penetrate more easily and cook the pork evenly.
- Cook the skewers in the very hot griddle pan for 8-10 minutes, turning occasionally until done.
- Remove the skewers from the griddle pan and give them a squeeze of lemon juice, a drizzle of olive oil and a sprinkle of paprika.
- They are great served with warmed pita breads, tzatziki and a Greek salad.
