TUNA SALAD


Nutritional values per 2 serving:

calories 277, protein 28g, fat 16.4g (saturated 2g), carbs 16g (sugar 4g), sodium 3.1g


INGREDIENTS

  • 1 can (150g) tuna steak in spring water, drained
  • 1 bag (100g) baby leaf herb salad
  • 80g cannellini beans in water, drained
  • 5 sundried tomatoes in oil, drained & roughly chopped
  • 80g (drained) roasted red peppers, large dice
  • 10 Kalamata black olives
  • 100g sliced artichoke hearts in water, drained
  • 4 slices cucumber, halved
  • 10 cherry tomatoes, halved
  • Dressing
  • 1 ½ tbsp (22ml) extra virgin olive oil
  • 1 tsp (5ml) sherry vinegar (or red wine vinegar)
  • ½ lemon, juice and zest

METHOD

  • Whisk the dressing ingredients together.
  • Toss together in a bowl the herb salad, cannellini beans, bell pepper, sundried tomatoes and roasted peppers. Place on a serving plate.
  • Arrange the remaining ingredients over the salad.
  • Drizzle with dressing and serve.
